Remember me? It’s Randle, the weird vegan who decided to renovate an RV with my husband and travel across the US for 4 months. The one who has been blowing up your Instagram feed with pictures of smoothies and rocks. Really old rocks.
And in typical Randle fashion, I am back here—not to tell you about what #RVlife was like—but to announce a NEW adventure.
As a friend commented on Instagram last week, “I let you out of my sight for 10 minutes & just look what you’ve done….”
The big news
After all that trekking across the US, I got a new job in NYC, and last week, my husband and I rented a Kia Soul, stuffed it full of suitcases (and 1 doggy), and drove from Waco to THE CITY. Here in New York—and starting tomorrow—I’m going to be working in content like I was at <3 Skillcrush <3, but at another company I really love called Teachable, based here in NYC. I’m pinching myself.
I’m so excited about my new company—I’ve already met lots of coworkers in Slack and in person, and I think I’m going to learn a lot from them and still have fun at work. Plus, the work, is right up my alley. Still doing the content marketing thing (basically doing everything under the sun to build up an email list that loves and trusts the brand), but also getting to work in the online course space and support instructors with resources.
Aside from work though, moving to NYC is something I’ve wanted to do for so long. So long, in fact, I had mostly given up on it. It just didn’t seem feasible, you know? First off, I’m not 22. I couldn’t waltz in like Hannah Horvath and take a temp job, or at least, I felt I couldn’t ask my husband to uproot his life so I could “do the New York thing” without a real plan. And I’m definitely not a wizened but chic Carrie Bradshaw who could show up and just handle NY. Do you know what I mean? Whether it was true or not, I felt like life had carry me away from that and it became less and less possible to pursue.
But it is really happening! So just imagine Girls or Sex in the City, except I’m approaching 30 and taking the bus is something that still scares me. And instead of being single and wearing a metallic dress at a party in Bushwick, I’m picking up pizza and wine for me and my husband and going to bed by 11. I don’t know, I see a web series here.
I’m not sure if you’re really interested in my NYC adventure or in “life” stuff that doesn’t have to do with vegan recipes, but I may just share more till you cry Uncle—like how the heck we moved here from Texas, what neighborhood we’re in, etc.
What does this mean for The Waco Vegan?
In the meantime, I thought I’d lay out what I want to use this space for in the next year, and what you can expect from The Waco Vegan.
First off, for now it’s going to have to be The Waco Vegan…in New York. (Lord knows the New Yorkers won’t consider me a local!) And since Waco is something that really gets into your blood, no matter where you end up, I’ll run with my self-dubbed title till it stops working. 😉 Fun fact: Shorty had to talk me out of a Waco water tower “W” tattoo this week. He had a point—people could interpret that “W” to mean anything!
Anyway, in 2017, I want to use this blog to share with you:
- More vegan food! If my first week here is any indication, coming up with new vegan recipes in a tiny kitchen will be exciting! And think of all the vegan New York food I can tell you about. There have already been donuts, pizza, and bagels. 🙂 🙂
- Behind the scenes info on RV life. I haven’t forgotten. I am still processing the trip and I have LOADS to share about what it was like, what to do if you are interested in living on the road, etc.
- Life stuff. In the spirit of “you do you,” I’m not going to worry so much that posts like this one are a little out of place on a food blog. Like I said, I’m just going to keep sharing till you cry Uncle.
- Hopefully…video! I am a video addict (but not a video editing addict), and I really want to get going on YouTube this year and share that with you here.
- A few other fun things I have in mind. 🙂 🙂 More soon.
