Pineapple Coconut Mint Green Smoothie

  • 2 handfuls kale
  • 4–5 mint leaves (or 1 sprig)
  • 1 Tablespoon chia seeds
  • Juice from ¼ of a lime
  • ¾ cup coconut water (unsweetened)
  • 2–4 Tablespoons aloe (start with 2 Tablespoons if you’re a beginner)
  • 1 cup frozen pineapple chunks
  1. In a blender, combine kale, mint, chia seeds, lime juice, aloe, and coconut water. Blend until the kale is puréed and you can’t see any whole chia seeds.
  2. Add the pineapple chunks and purée until smooth.
  3. Serve immediately!
