Cherry Chocolate Overnight Oats

  • ⅓ cup rolled oats
  • 1 cup cherries, divided
  • 1 teaspoon goji berry powder (optional)
  • ⅔ cup unsweetened almond milk (I like homemade or Califia Farms)
  • 1 Tablespoon chia seeds
  • 1 Tablespoon maple syrup
  • 1 teaspoon cacao powder
  1. Half and pit the cherries.
  2. In a food processor (the personal size attachment works great if you have it), combine half the cherries, the goji berry powder (if using), the almond milk, and the chia seeds. Pour into a glass dish and stir in the rolled oats. Refrigerate overnight.
  3. In a small glass dish, whisk together the maple syrup and cacao powder with a fork. Microwave in 5-second spurts until it whisks together easily. Cover and refrigerate till morning. Store the remaining cherry halves till morning.
  4. In the morning, give the oats a stir, then drizzle them with the chocolate syrup and top with the remaining cherries.
